chicken avocado lime soup


Y'all.

This is the most delicious soup. 
I must admit that this is not my original recipe, and I will provide a link to the blog where I found this.

I made a big, steaming pot of this soup the other day. I had everything in the pot cooking except the lime juice. When I tasted it I thought, "Huh. Chicken soup." 
Then I added the lime juice and...
Pow! It was amazing! Don't leave the lime juice out!

This is so delicious I had to share it with you.

So make a pot of this soup.

And hurry up about it, because it's fall and in the fall we eat soup.


Chicken Avocado Lime Soup

serves 6

Ingredients:

1 1/2 lbs boneless skinless chicken breast
1 T olive oil
1 cup chopped green onions
2 jalapenos seeded and minced (leave some seeds if you want heat)
2 cloves garlic minced
8 cups chicken broth (or 4 14.5 oz cans)
2 Roma tomatoes, seeded and diced
1/2 t ground cumin
salt and pepper to taste
1/3 cup chopped cilantro
3 T fresh lime juice
diced avocado 
tortilla chips

Directions:

Heat olive oil in a large pot and saute green onions and jalapenos until tender, then throw in garlic and saute for about 30 more seconds. Don't burn your garlic! Add chicken broth, tomatoes, cumin and season with salt and pepper to taste. Add chicken breasts and bring to a boil. Reduce heat to medium and cook 10-15 minutes or until chicken is done. Reduce heat to warm and remove chicken breasts and shred the meat. Return shredded meat to pot and stir in cilantro and lime juice. You can throw in some lime slices too. Add avocado to soup just before serving. Serve with tortilla chips, sour cream, and shredded cheese.

  1. Looks delicious, Hope. Definitely going to try it! My daughter Elizabeth is crazy about jalapenos, so this should suit her fine!
